In honor of the elusive summer weather, I am posting this most delectable of summer treats. They make these at the local drug store/soda fountain in town. AND, since none of you EVER come and visit me, you'll never know how good they are. SO, I am sharing this recipe. (you can feel guilty now) I have a friend who works there, so she has made them at her home for me! Enjoy!
Vanilla ice cream--maybe half a picher full
3-4 Fresh squeezed lime juice, to taste
Sprite, quite a bit, enough to make it thin shake consistency
Sugar, to taste (if the limes are too tart)
Put all the stuff in the blender and blend away. Just make it taste yummy. You can put some green food coloring in it for effect, but I try to avoid adding food coloring to my stuff.

Wassail
I know Christmas is over, but this wassail is so good I could drink it all winter long! It's especially good when you are sick and have a sore throat--so soothing. It also smells so good as it brews on your stovetop. I got this recipe from my mother-in-law and it's one you can't go wrong with.
2 1/2 c sugar
4 c water
2 sticks cinnamon
8 whole allspice
10 whole cloves
3 chunks of crystallized ginger (in spice aisle)
4 c orange juice
2 c lemonade
2 qts. apple cider
-Combine sugar, water and spices in a large pot (very large). Boil 5 minutes. Take off heat and put lid on and let sit an hour or more. When ready to serve, remove spices and add juices. Heat and serve. Can be reheated. Makes 1 1/2 gallons.
-If it's too sweet for your liking you can add a little fresh lemon juice.

Monday Morning Cleanse
I call this my monday morning cleanse because Sunday's always seem to be a heavy food day-well the whole weekend can sometimes be that way-so when Monday morning rolls around I want something light and refreshing as I get back to my normal diet and try to be good. So this smoothie is simple, but fills you up and gives you lots of "nutrients" (per Nacho).
1 c frozen strawberries/blueberries/or fruit
8 oz. cold water
2 packets Splenda
-Blend in blender and drink immediately. You can use any kind of frozen fruit, but I prefer berries due to their high content of anti-oxidants and all that good stuff.

Mango Colada
This recipe is from my most favorite cooking website ourbestbites.com (the picture is from their website also). This was really, really yummy! Cream of coconut is a dream! (you can find it in the alcoholic drink mixers aisle) This would be good too without the pineapple, or even just do a lime/coconut colada. Talk about yummy!!
1 c mango cubes (about 1 mango)
Generous 1/2 c. of pineapple chunks and juice (or syrup) together
Juice of 1 lime
1/3 c cream of coconut (NOT coconut milk)-we added even more!
Crushed ice
pinch of sugar to your liking (we added this)
-Mix all in blender and mix thoroughly until no chunks. Add as much or as little ice as you like.
